Introduction

The House of Lords Catering and Retail Services Department provides catering facilities to Members, their guests, Staff of the House, and visitors.  It also provides a private events service to both Members of the House and the public and sells House of Lords gifts and souvenirs in the Gift Shop.

The House of Lords Catering and Retail Services Department are seeking to recruit a passionate, hardworking, flexible and skilled Pastry Chef De Partie who can perform at the highest level, demonstrating teamwork, efficiency, attention to detail and professionalism. Working across multiple outlets including fine dining restaurants, large and small banqueting and events, brasserie restaurants and staff dining outlets. 

The House of Lords Pastry kitchen is a diverse and busy environment, producing fresh breads, plated desserts for restaurants and events (fining dining and brasserie style), afternoon tea (restaurants and events), canapes, homemade ice creams and sorbets and a variety of chocolate products daily.

The Role

The Pastry Chef de Partie will primarily be responsible for the preparation, cooking and presentation of all required food items from the pastry kitchen, as set out by the Pastry chef. The Pastry Chef de Partie will lead a team or work individually to meet all requirements in a variety of outlets, requiring a flexible approach, teamwork and the ability to multitask.  

The Pastry Chef de Partie will lead from the front, with a strong presence, exceptional organisational skills and a positive attitude you will be able to communicate effectively with a variety of characters from across the department ensuring each service is successful, regardless of the outlet. You will be willing to share your skills and knowledge with junior members of the team, taking the time to teach where necessary and at the same time improve your own learning and communication skills. 

Additionally, the Pastry Chef de Partie will assist with administrative side of the Pastry kitchen operation, including contributing to daily planning, ordering of provisions, completion of daily control sheets (health and safety, cleaning and food temperatures) and team briefings and tastings etc. as well as any other reasonable duties as required by the Pastry chef.

Skills and Experience

  • Experience - You have proven and relevant experience of being accountable within the industry for the delivery of a high standard of formal dining, private dining, banqueting and cafeteria services.
  • Professional and Innovative - A professional, innovative, and creative chef with the skills and fortitude to tackle the range of challenges.
  • Knowledge of Food Produce and Menus - Have a great knowledge of food products and have a good understanding of food GP%. To have a strong knowledge of food seasons, food trends and food pairing.
  • Communication Skills – Strong communication and interpersonal skills, both written and oral, with the ability to build effective relationships and work successfully within a team.
  • IT Skills – Must have good IT literacy and numeracy skills.
  • People and problem solving skills – Capable of motivating staff as part of a team often under pressure and to prioritise workload to deliver a high-quality service. You will have strong problem-solving skills and the ability to succeed regardless of the challenges ahead.

Whilst proven experience and ability are more important than technical qualifications, you will have, or be willing to achieve formal Chef qualifications up to level 2 (or equivalent) in Professional Cookery.
You will also be fully qualified in all essential health and safety legislation including food safety to level 2 as a minimum requirement.
